Chinese Ravioli with 'Nduja TuttoCalabria

Ingredients for 4 people:

Ravioli dough

  • 75 g 00 flour
  • 75 g durum wheat semolina
  • Water as needed

Stuffing

  • 3 fresh sweet sausages
  • 3 tablespoons fresh cream
  • 2 tablespoons ndujia
  • Broth
  • 200 g pumpkin
  • 4 porcini mushrooms
  • 1 sprig fresh coriander
  • Salt

Procedure::

  • Mix the flours with the water until you obtain a smooth and homogeneous dough, set aside.
  • In a mixer put: sausage, ndujia and cream and blend,
  • Meanwhile, prepare the broth with the vegetables, leaving a mushroom aside and roast it.
  • Roll out the dough and form circles of 7 cm in diameter, place a spoonful of dough and form the ravioli
  • Steam cook them for 15 minutes
  • Serve with the filtered broth and roasted mushrooms.
