Gnocchi with dried chili pepper

Ingredients for the gnocchi:

  • 1 kg of red potatoes   
  • 200 gr. di flour 00 
  • 1 egg
  • Salt

Seasoning ingredients:

  • 1 pork sausage
  • 10 asparagus or alternatively asparagine
  • Extra virgin olive oil to taste
  • 1 TuttoCalabria dried chili pepper
  • Salt


  1. First, let's boil the red potatoes in a pan with their skins on for about 20 minutes. Once ready, we take a potato masher and mash them quickly, arrange the flour in a well and immediately add the still hot potatoes, the egg and a pinch of salt. We begin to knead vigorously until we obtain a smooth and homogeneous dough.
  2. Once ready, we form cylinders just longer than a finger and cut them into cubes and do the same for the rest of the dough. We take a fork and slide the cubes delicately over it to make those small thin lines typical of gnocchi.
  3. In the meantime, we put a non-stick pan on medium heat and add a drizzle of extra virgin olive oil, add the sausage and our asparagus, washed and cut into cubes, sauté them for a few minutes and add a cup of water and bring them to the end. cooking.
  4. We take a pot, fill it with water and salt it. Only when the water boils do we throw in our gnocchi with "maximum cooking time 2 minutes". Once ready, we will see them emerge to the surface, we drain them and sauté them in the pan with our seasoning, we add the chilli powder made with the dried chilli pepper from Tutto Calabria, eliminating the part of the seeds and passed through the spice grinder. You will see that it will give an extra touch to this tasty dish.
