Swirls with Calabrian pesto

Pumpkin rolls and Sila mushroom pesto



  • Cut the pumpkin into cubes and cook it in the microwave at maximum power for ten minutes, alternatively you can use the normal oven at 180 degrees for about 20 minutes.
  • Once cooked, blend it with the water and oil until you obtain a puree. Place the flours and yeast into the bowl of the mixer, mixing with a spatula to disperse it, now add the puree obtained and the egg and start kneading with the dough hook until the dough comes together. If you don't have a planetary mixer, proceed by hand.
  • Place the dough obtained in a bowl and cover with cling film, it will have to double in volume, it will take from five to six hours, depending on the environmental conditions. I recommend placing the bowl in the oven that has recently been turned off or with the light on.
  • When the dough has risen, turn it onto a well-floured work surface and roll it out with your hands to form a rectangle, sprinkle it with a jar of Calabrian Sila porcini mushroom pesto from the Tutto Calabria company and roll it up from the long side.
  • Now cut the rolls, take dental floss or other sharp thread, place it under the roll, cross the two ends and cut, so as to obtain non-crushed rolls.
  • Let it rise for another hour and a half and then bake at 180 degrees for 15/20 minutes.
    Serve them hot or warm and you will surprise everyone at the table.
