Savory biscuits with onion and chilli jam

Savory hazelnut biscuits with TuttoCalabria jam made from Tropea PGI onion and chilli pepper.

Ingredients (6 people)
• 260 g of 00 flour
• 40 g of hazelnut flour
• 150 g of butter
• 40 g of very cold water
• 10 g of sugar
• 5 g of salt
• 1 jar of Tutto Calabria onion jam
• 1 jar of Tutto Calabria chili pepper jam


  1. In the bowl of a planetary mixer, or other food processor, insert the 00 flour and the hazelnut flour, the cold butter cut into cubes, the water, the sugar and the salt and mix until you obtain a homogeneous mixture. Wrap in cling film and leave to rest in the fridge for an hour.
  2. If you don't have a planetary mixer, you can also proceed manually by combining all the ingredients in a bowl.
  3. Once the resting time has passed, roll out the dough very thinly on a sheet of baking paper and cut out the biscuits. Remember that to make a finished biscuit, you will need 2 and on one of the two you will have to cut out, for example, a smaller heart.
  4. Cook them in a static oven at 180 degrees for 15/20 minutes, depending on their thickness. Once cooled, spread the chilli or Tropea onion jam on the uncut biscuit and close with the cut one.
