Creamed cod and spicy oil

  • 500g of cod already soaked
  • Waterfall
  • Bay leaves
  • Lemon peel
  • Black peppercorns
  • Extra virgin olive oil
  • Spicy oil
  • Salt

  1. We put the already soaked cod in a pan and cover it with cold water.
  2. Add a few bay leaves, a squeeze of lemon and some black peppercorns.
  3. We put the pan on the stove over low heat and bring everything to temperature.
  4. During cooking, use a slotted spoon to remove any impurities that rise to the surface.
  5. Once the cod is cooked, we drain it carefully, but we keep the cooking water.
  6. We put the cod in the Thermomix or in a mixer together with a generous drizzle of extra virgin olive oil and a little spicy oil (adjust the quantity according to your taste).
  7. We also add a little cooking water to obtain a creamy and homogeneous consistency while we mix everything.
  8. Once the cod is well creamed and creamy, we are ready to plate.
  9. We arrange the creamed cod on the serving plate and add a drizzle of spicy oil on the surface to give that extra touch of taste and spiciness.
